Hinterland makes vintaged sparkling wine in the Traditional Method (Les Etoiles, Rose, Blanc de blancs), Charmat Method (Whitecap and Borealis), Ancestral Method (Ancestral and Lacus-a Petillant Natural), as well as very small quantities of Chardonnay, Syrah and Gamay Noir under our Red Herring label. We also produce an apple cider and a very dry, funky cherry/apple cider.
